My Favorite Celery Stir Fry

My favorite celery stir fry is a recipe I came up with when I was about 16 years old. This, coming from someone who really doesn’t like celery.

The story goes like this…when I was 16, I had the idea of creating a very quick meal that was savory, delicious, and satisfying. Problem was, I wasn’t keen on celery, really ever. It was a little bitter, salty, stringy, and just not my favorite at all. For some reason, I went ahead and just cut up a whole bunch of it (following the idea of, “if you’re to a fan of it, go ahead and make a lot of it and you’ll get used to it”), sautéed in with garlic, oil, added in some soy sauce, and there we have it. It was amazing! Salty from the soy sauce, deep and a little spicy from the garlic, lean, mean, and went well with a side of rice and some leftover garlic chickpeas. My favorite celery stir fry became a go-to meal when I wanted something hearty, filling, but on the lighter side of things. And it changed my mind about celery, too!

Quick & Easy Meals

I love how people sometimes say “quick and easy” and yet it ends up being 15 ingredients and about 45 minutes later. To some, maybe that’s quick and easy. For me, I often say “speak to me like I’m 5” (at least when it comes to computers) or ~ can a 10 year old cook this?

My “quick and easy meals” need to take 5-10 minute and be minimal, but loaded with flavor. Maybe that’s because, like for many of us, hunger comes quickly and we may not eat at regular intervals. While eating more regularly should be something we can fix, life sometimes gets…lifey. An appointment takes longer than usual, traffic, children have melt-downs, and it’s not always fun to micromanage every single second of every day. Sometimes, it’s great to be planned and efficient about everything. Other times, life is more fluid.

So when we have moments like these, it’s nice to remember you can make something delicious, nutritious, lean, low in sugar, high in fiber, and plant powered, using 3 ingredients and flavors. That’s a nice deal, when you can get it.

This Celery Stir Fry Is:

  • Simple
  • Delicious
  • Quick and easy!
  • Versatile (throw in some carrots for a nice color change)
  • Hearty but light ~ for those that don’t enjoy being weighed down by heavy food.
  • Satisfying!

Light Meals in Winter

A note about eating light in the winter. I really enjoy eating, trust me. But I always opt for lighter feeling meals, since I don’t like the feeling of heaviness after I eat. It makes me tired, lethargic, as if my body is spending loads of time digesting. It’s just not for me. So if you’re looking for winter-hearty meals that warm you up, but don’t put you to sleep due to digestion, this one fits the bill!

My Favorite Celery Stir Fry

Savory, quick and delicious, this is one of my favorite ways to prepare celery!

Ingredients
  

Veggies

  • 8 oz celery, washed well and cut on the bias (or cubed) ~ this cooks down to about 6 oz.

Protein

  • Your favorite protein, or 4 ounces of plain tofu (diced or crumbled), as I used here

Grain

  • 4 oz cooked rice, quinoa, millet, etc, optional

Condiments

  • 2 cloves garlic, minced
  • drizzle of low-sodium Tamari or soy sauce
  • pinch salt
  • Black sesame seeds and chili flakes, optional

Instructions
 

  • First, warm a skillet over medium high heat. Add in a drizzle of sesame oil and the sliced garlic. Add in the salt and sauté just until aromatic, being careful not to burn.
  • Next, add in the celery, and about 1 tablespoon or two of water. You can either sauté until the celery is done, or top with a lid and cook it that way.
  • Lastly, add in the tofu and stir to heat. Sprinkle some sesame seeds and chili flakes on top, if using. Serve with rice, optional.
