With a food processor, this truly is the easiest garden gazpacho ever. In under 5 minutes, you have yourself an incredibly filling soup that makes the perfect lunch for the week. Fresh, vibrant, raw, and filling!

This recipe came out of a fun story of necessity. About a year ago, we came back from a one-week trip away, only to return to 17 (no less than 17) cucumbers that our son harvested for us. They were all patiently waiting in the fridge for me to do something with them, and so I got to it. I threw 4 of them in a food processor, mixed in onion, garlic, tomatoes, peppers, a splash of vinegar, cilantro and out came the quickest lunch recipe that I happily ate for days after. Here is that exact recipe, more or less.

What Is Gazpacho?

Gazpacho (sometimes called “gaspacho”) or is a Spanish soup, usually made from a tomato base alongside fresh veggies, all blended together: garlic, cucumbers, peppers, onion, and herbs. It’s a perfect summer food because it utilizes the vegetables that are in season, and it’s served cold. No turning on the stove here! Not that we’d want to, either, with 90 degree weather.

Some people add tomato paste or sauce to the soup to make it super red, which is also delicious. But I find that tomato products really alter the taste. Also, using whole garden veggies is the simplest approach to making it quick and delicious and no fuss. No cans of tomatoes needed here!

What Makes This Easy?

The fastest way to really chop and blend these veggies is through a food processor. I’ve had mine for years, and love it for this particular reason: it does a lot of chewing for me! Here is the KitchenAid 7 Cup Mixer, a model closest to the one I currently use. The basin is large enough for me to add in 3 cucumbers at once and make the process very easy.

Alternatively, you can use a blender, but it won’t look or taste the same. But in a pinch, pulsing in a blender can also work. I would blend the tomatoes really well until they form a soup, then small dice the onion/cucumber/peppers and add them in.

Equipment

  • Food processor with a large basin.

Ingredients
  

  • 3 regular cucumbers, ends trimmed, large chop
  • 1 red pepper, large chop
  • 4 hearty tomatoes, or about 3 cups mixed tomatoes (cherry, plum, etc.), large chop
  • 1 medium red onion, peeled, large chop
  • 2 garlic cloves, minced
  • handful cilantro leaves
  • 1/4 cup balsamic vinegar (or vinegar of your choice) *balsamic darkens the soup a bit but the flavor is superior, in its sweetness. Raw apple cider vinegar may be used.
  • salt and pepper, to taste
  • chili flakes, optional

Instructions
 

  • Place the cucumbers in a food processor and process well, depending on the texture you prefer. I make mine a super small dice. Pour this out into a big bowl.
  • Do the same with the red pepper. Add this to the big bowl.
  • Place the tomatoes in a food processor and process until watery. Add this to the big bowl.
  • Place the onion/garlic together and process until fine. Add this to the big bowl.
  • Mince the cilantro leaves and add to the big bowl.
  • Add the salt, pepper, and vinegar and taste for seasoning.
  • Plate and add the chili flakes on top.

Notes

Note: I have a regular food processor which holds a lot at one time, and use it for this soup. A smaller one, while convenient, will make this “not the easiest” gazpacho recipe since it can’t hold a lot of material at one time.
