My favorite everyday salad is exactly that: a daily reminder to get my greens in, with a creamy avocado dressing, and under 5 minutes to put together.

My favorite everyday salad started years ago when I wanted something easy, quick, delicious, creamy, but using whole ingredients. It’s plant based, uses avocado as a whole fat, and you can easily swap your favorite greens to make it extra delicious. The secret trick is to use salad tongs to mash up the avocado, while mixing the ingredients together: that’s what makes the dressing! It’s effortless and delicious, and it’s my daily side kick that never lets me down.

But First, Some Tips!

  1. My favorite vinegar is raw fermented apple cider vinegar (with the mother). Trader Joe’s has one version, and Bragg Raw Apple Cider Vinegar is another version.
  2. Tear your lettuce instead of cut. It makes a big difference in mouthfeel.
  3. Red onion and sweet Vidalia onions are my favorite in this salad. Regular yellow onions are too pungent.
  4. Grab yourself some kitchen tongs, as they make the best dressing. They crush the leaves while tossing them, which makes them a little more tender, and gets the avocado in all the small crevices!
  5. While this salad is basic, I also enjoy throwing in tomatoes in the summer and grated carrots in the fall. Yum!

Tools You Need For This Recipe

I highly recommend having a good sized bowl and salad tongs (like these). The tongs help to crush the cell wall of the greens while distributing the creamy avocado (which is what makes it into a dressing). It’s a lovely little trick to feel like a master of this recipe. That’s it!

Try These Greens!

Try varying your leafy greens, especially the dark leafy greens which can even help slow cognitive decline according to this one study. This salad lends itself particularly well to really soft lettuces (green and red leaf) and also romaine, which adds a healthy crunch. Here are all the greens I love to use in this lettuce:

  • Romaine hearts: it’s low glycemic and can even help with post-meal blood glucose
  • Bibb lettuce
  • Arugula: high in phytonutrients!
  • Mesclun Greens
  • Massaged kale (high in chlorophyll)
  • Red lettuce (super high in antioxidants), and it’s one of my favorites.
  • Green leaf lettuce

Ingredients
  

Veggies

  • 1 medium romaine heart, torn (or desired amount)
  • 1/4 cucumber, sliced
  • 2 tbsp sliced red onion (or sweet Vidalia onion)

Fat

  • 2 oz avocado, cubed

Flavorings

  • Dash of salt
  • Drizzle of raw apple cider vinegar
  • Cracked black pepperINSTRUCTIONS

Instructions
 

  • First, combine the romaine, cucumber, and onion.
  • Add in the avocado, salt, and drizzle the apple cider vinegar.
  • Using kitchen tongs, toss the salad well and taste for seasoning.
  • Add freshly ground black pepper and enjoy!
