Fresh Spring Rolls with Peanut Sauce

Name: Fresh Spring Rolls with Peanut Sauce
Ingredients: 2 scallions, diced; 2 garlic cloves; 3 frozen cherries, defrosted (I used these instead of a sweetener, but you can include raisins or maple syrup, etc.); 1 inch knob of ginger, unpeeled and grated or diced small; 1/4 cup tamari or coconut aminos; 1/8 - 1/4 cup water; 1/3 cup peanut butter or almond butter; 1/2 jallapeno, seeded and chopped (optional but delicious); 1/2 cup of each: grated carrots, sliced red cabbage, cucumber strips; 3 scallions, quartered lengthwise; few mint leaves; handful of cilantro leaves and stems; sprinkle of sesame seeds, for the top; 5 or 6 rice wrappers (or upgrade to romaine leaves)
