Freshly made salsa is paired with raw corn to create a gorgeous new salad that pairs well with everything this summer!

I LOVE raw corn and I LOVE fresh salsa so the only reasonable thing to do was combine them. In addition to the fact that I really just wanted a fresh, zesty chopped salad where everything was the same size and just played nicely together. This corn salsa salad is my new favorite thing.

The Perfect Combo

It’s almost as if summer just knows what goes well together, right? At the same time, tomatoes, cucumbers, onions and raw corn come together at the farmers market. I lived in New York City for a couple of years, and I distinctly remember falling in love with those chopped salad places you’d find around every corner. Throw in your veggies, chop them all up, dress, and you’re off, tasting a little bit of everything in every bite. I tried to recreate this here, and when you check out what’s in season, it all works well together. The tomatoes are sweet, as is the raw corn, the lime adds a perfect amount of acid, the chipotle adds a touch of heat, and the red onion is the perfect amount of pungent. This salad is not only gorgeous to bring to a potluck or a picnic, but it’s also so well balanced in textures and flavors.

Corn Salsa Salad Recipe

  • 1 corn on the cob, kernels removed
  • handful of cherry tomatoes, sliced or diced
  • 1/4 English cucumber, diced
  • 1/4 cup diced red onion
  • 1 tsp chipotles in adobo
  • pinch salt
  • drizzle of olive oil or cubed avacado, your choice
  • few dashes of smoked paprika
  • 1/2 lime, juiced

Combine all ingredients together, toss well, and adjust for seasoning.

I love to pair this with smoked chickpeas.

Ingredients
  

  • 1 corn on the cob, kernels removed
  • handful cherry tomatoes, sliced or diced
  • 1/2 English cucumber, diced
  • 1/4 cup diced red onion
  • 1 tsp chipotles in adobo
