This sugar-free blackberry fool overnight oats recipe is creamy, sweet, and feels decadent but only uses whole, plant-based ingredients for a low-glycemic treat!
This blackberry fool overnight oats is a naturally sweetened alternative to the typical “blackberry fool” which uses whipped cream and sugar. Typically, in this way, it’s low in protein and pretty high glycemic. The recipe I’m sharing now uses banana and the natural sweetness of oats to sweeten the mixture, yogurt to thicken it and make it creamy, and fresh blackberries and boysenberries for brightness and color. So if you have these three (berries, yogurt, banana), you’ve arrived at the Blackberry Fool recipe, or as close as you can get to it with being sugar-free.
BERRIES IN THE GARDEN
First I’d like to start by talking about the garden (of course). We have a bed of berries right behind our house, which at this point contains a mixture of yellow raspberries (transplants from my mother) and heirloom berry brambles (Loganberries and Boysenberries). Very soon they will be reaching their peak and I can’t wait to enjoy them! They range from deep red colors to the dark black they eventually turn (unless the birds get to them first). If you don’t have berry bushes yourself (or a friendly neighbor that likes to share), you can certainly just use blackberries for the entire dish, as it’s aptly named after traditional blackberry fool. I like to use a mixture of whatever berries we have around.
The true “Blackberry fool” taste comes from the blackberries, banana as sweetener, and yogurt. As long as you have that, you can work off the recipe and make it yours. As per usual, I will give you ways to customize this recipe at the end, and make it completely yours.
A SECRET INGREDIENT FOR BLACKBERRY FOOL OVERNIGHT OATS
The ingredient that takes this “blackberry fool” recipe over the top is lemon. I used a drop of food-grade essential oil of lemon, but in a pinch, I think grated lemon zest or lemon extract both do the job beautifully.
WAYS TO CUSTOMIZE THIS RECIPE
- Exchange the fruit to the tastes of the season! Include raspberries, red currants, strawberries in the summer. Use persimmons and plums in the fall, and citrus in the winter.
- Change up the flavor by using other extracts.
- Feel free to change up the flavor by using different spices such as nutmeg, cinnamon, pumpkin spice and altering the fruit in various seasons.
- Lastly, try a new grain, such as: fonio (a west-african grain that resembles couscous), teff, millet, rice, quinoa, etc.
