Spiced Peaches and Cream Oatmeal

This spiced peaches and cream oatmeal is creamy, delicious, easy to make and celebrates the seasonal beauty of summer peaches with a touch of fall cinnamon!

Ingredients
  

Grain
  • 1 oz rolled oats
  • 6 oz water
Fruit
  • 2 oz banana, sliced
  • 4 oz peaches, diced and divided
Protein
  • 4 oz almond yogurt (or your favorite kind)
  • 1 oz walnuts, almonds, pecans or your favorite nuts/seeds
Condiments
  • a sprinkle of cinnamon, nutmeg, or both

Method
 

  1. First, combine the oats, water, banana, and 2 oz of diced peaches. Bring to a boil. Cover and simmer until everything softens, about 4-6 minutes. Check on it often so it doesn't stick.
  2. Pour the oatmeal into a bowl and add the yogurt. Swirl it around, have fun!
  3. Top with the walnuts and remaining 2 oz peaches, and sprinkle with cinnamon. Serve and enjoy!
